Cooking With Kids--Safely!

School's out! And summer is a good time to introduce your child to chores in the kitchen!

To help you along, here are some things to remember when
cooking, especially with kids. Plus a couple of
kid-friendly recipes!

1. Keep temperature of hot water below 120 degrees F.

2. Turn handles of pots and pan toward middle of stove to
avoid accidental bumps.

3. Wash hands with soap and warm water before cooking or
preparing food.

4. Keep hands away from the face, hair and pets. If you
touch your pet, wash your hands again before preparing food.

5. Tie your long back so it won't get in the way!

6. Always use potholders or oven mitts when handling
something hot and make sure the potholders are not wet.

7. Always pick up a knife by its handle and never try to
catch a falling knife.

8. Never put a dirty knife in a sink full of water.
When it is ready to be washed, put it where it can be seen.

9. Never pull or tug at an electrical cord.
Remove it with your hand on the plug.

Now for some fun recipes!

Bananas on a Stick

Crush a few graham crackers into crumbs. Peel a banana and
cut in half crosswise. Insert a popsicle in flat end.
Spread with peanut butter and roll in graham cracker crumbs.

Bunny Salad

For each child, place a crisp lettuce leaf on a plate. Place
a canned pear half upside down on the lettuce. Make a bunny
face using 2 raisins for eyes, a red cinnamon candy for a
nose, and 2 blanched almonds for ears. (You could also use
small carrot sticks.) Add a dip of cottage cheese for a
fluffy tail.

A cool drink for summer!

Fruit Smoothie

1 banana

1/2 cup strawberries, halved

1/2 cup pineapple chunks

3/4 cup orange juice

1 cup ice cubes

5 Useful Ideas for Empty Holiday Popcorn Tins

If you have read any of my articles you know I am a big fan of reusing, redoing, and making do with items we find in our everyday life. The metal popcorn tin, a lot of us get for a gift during the holiday season, is one of my favorite things to recycle.

Here are five ways I have used several of them in my home:

[1] The tin makes a wonderful portable charcoal grill for picnics or camping. Use a bottle cap opener to make some air holes about an inch from the bottom of the can, to enhance air circulation. Crumble a couple of large pieces of foil, two feet or more, in a loose ball and place them in the bottom of the tin. Add an easy to light charcoal to the top of the foil.

You can use an old rack from a cooking stove, refrigerator or canner, to grill your food on. After washing and drying it, lightly rub a small amount of olive oil over the tines then place it on the tin's rim. Strike a match and get ready to make the food of your choice, allowing the grill to get hot before placing your meat on it. The tin will last 1-2 seasons depending on how often you use it.

[2] Using the same method you can also have a portable smoker by adding damp to wet hickory chips on top of the charcoal, then placing your meat a few inches above the chips. My insert came from my old canner, all I did was turn it upside down and sit my meat on it. You will need to add some holes in the lid of the tin, to release some of the smoke. I used a hammer and a large nail to form a large and small circle in the lid. Soon you will be known as the best cook at the camp grounds.

[3] Pop Corn Tins also make great storage units for out of season clothing. Place clean clothing in the tin, add a softener sheet before placing the lid on so your clothing will still be fresh smelling when you need them. In most cases the tins are air tight, so bugs, ants and other little no seeums can't decide to make your clothing their winter homes.

[4] Pop Corn Tins also make a great storage container for dry pet food. If you buy your pet's food in the large paper bags, these tins work great at keeping the food dry and fresh for your four legged family members.

[5] If you have run out of room on your pantry shelves for can goods, the pop corn tin is ideal to store extra can goods in. My Mother kept three of them stacked in a corner of her kitchen. She had them colored coded with red foods [tomatoes, etc] in one, green foods [beans, broccoli, etc] in another and boxed food items in the third one.

Hyundai Santa Fe: Buy It or Bag It?

Hyundai's all-new Santa Fe SUV is now getting some of the steam in the auto industry. Said model was previously launched as a compact in the year 2000. However, it was later redesigned by the manufacturer to compete with other makes and models. It comes in 3 distinct trim levels - GLS, SE, and the fancy Limited.

Santa Fe was also given refined feel and comfort that made it big as a hot-selling vehicle. Aside from that, Santa Fe is designed to be spacious to augment the hauling capacity of the vehicle. It measures 184 inches in length, a bit longer than its ancestor. It was also made wider and taller. Its Touring Package also offers extra row of seats to make Santa Fe a 7-passenger SUV.

According to critics, the new version of Santa Fe is given a dash of sophistication to give it a catchier totality. In fact, it features cleaner lines, sharper front ends, power windows, cruise control, mirrors and doors, electronic stability, antilock brakes, front and side airbags and sloped grill. Various enthusiasts who tested the car are giving it an excellent rating. They say that the vehicle is relatively tight, the gaps are uniformed and the fit and finish are superb.

The worthy rivals of Santa Fe include Honda Pilot and Toyota Highlander. Toyota parts incorporated in Highlander, Pilot and RAV4 are displaying their might in competing with Santa Fe. On one hand, Santa Fe boasts its body structure. Compared to Highlander, Santa Fe has 59% more rigidity.

Black Chef Hats

The most popularly used chef's hats are white in color. However, the latest market shows some trendy designer hats that come in different shades such as black, gray, checkered, red, blue and others. The black and the checkered ones are catching up on sales in the market compared to the traditional white ones.

Other models would include the black with checkered borders or the white ones with black or checkered borders. Red chef hats are also in vogue in the present market. Colored hats are mostly available in the cloth variety as compared to the disposable paper kind. The colored cloth chef hats are made of cotton or cotton blend material that can be starched and stiff while being comfortable to wear at the same time.

Colored chef hats are available with adjustable elastic or Velcro headbands, and have a comfortable sweatband built into them. Polyester chef hats are being made currently to give a crisper look than the cotton ones. Also, polyester or polyester blend chef hats are easier to maintain than the traditional cotton chef hats.

Although more and more chefs are using black chef hats, the head chef is still seen to be in a white hat. All the other chefs, cooks and the others working in the kitchen are in a revolutionary change with regards to colored chef hats. Black colored chef hats are also available in different styles like the base ball variety, short hats and such, changing the trend of the chefs wearing only long pleated hats.

Most chefs prefer black colored chef hats these days as the color tends to hide all the sweat and other splattered stains on the hat. Also, since it is a polyester blend it tends to soak up sweat a lot more than the disposable ones. Since they are available in a wide range of model, a deviation from the original plated style, more and more restaurants prefer that their chefs shift to the colored hats than the traditional white.

Although a complete black hat might look way different than a traditional chef's white hat, white hats bordered or checkered with black tend to make a distinct change in the tradition. They would also not be that different in the styles and only the color could be changed for that unique touch of difference.

Crockpot Recipes - A Busy Mom's Life Saver

If you are a busy mom like me, you probably dread coming home after a long day and making a big dinner for your family. We usually just make the same old think, day after day and week after week. How to we get out of those same old same old blues, you should make your Crockpot become your best friend. When cooking with a Crockpot you can easily prepare the meal the night before start the Crockpot in the morning before you head out for work and have a hot, delicious home cooked meal waiting for you when you come home.

There are many different variations of crackpots out there, and really any of them will do. You can easily purchase one for about ten to fifteen dollars for a basic one. Mine I bought for about 30 dollars but the convince factor of it truly makes up for the cost. Mine is large enough to hold a large roast or chicken, it has a high, medium, low and warm setting. It also has an automatic shut off time for when the meal will be done and sets it on warm waiting for you. It also has a removable insert that is dishwasher safe that is a definite plus. You also can purchase slow cooker bags (much like turkey roasting bags) that minimize clean up.

One of my favorite meals on a cold winter day is beef stew. It is hardier then a soup, and fills you up. Here is an old classic recipe my mother gave me that I use in my Crockpot.

Slow Cooker Beef Stew:

Ingredients:
1 ½ pounds of beef stew meet 1 inch cubed (usually can purchase pre cut at your grocery store)
12 baby carrots (or 4 medium carrots peeled and cut into 1 inch pieces)
4 white potatoes peeled and cut in chunks
1 onion peeled and quarters
2 tbsp Worcestershire sauce
2 beef bouillon cubes
1 tsp salt
¼ tsp pepper
2 bay leaves
½ tsp thyme
¼ tsp garlic powder
2 cups of beef broth
1 cup of water
3 tbsp flour

To start brown meat in a skillet in oil until lightly brown on the out side (do not cook all the way through). This step can be skipped if desired, but browning the meat locks in the flavor. In the Crockpot layer carrots, potatoes, onions and browned meat, as a note you should always place your vegetables on the bottom of the Crockpot. Add the Worcestershire sauce, beef bullion and all of the spices (except flour). Pour in broth and water to cover the vegetables and meat. Cook on low temp for 8 to 10 hours or on high for 4 to 5 hours. About 30 minutes before you are ready to eat, remove the bay leaves, mix together in a separate bowl the flour and about 1/3 cup of water, add to Crockpot and mix to thicken and make more of a gravy vice broth. Turn the Crockpot up to high and continue to cook an additional 30 minutes. Serve and enjoy.

A warm French bread, you can pick up at any grocery store or some dinner rolls go perfect with this stew.

When it comes to cooking with your Crockpot here are some hints. You can brown meat to lock in the flavors, if you choose not to add 30 minutes to your cooking time to ensure the meat is cooked through. Always place your vegetables on the bottom of the slow cooker so they cook properly. Never open the Crockpot to stir or taste, the heat will escape and you will have to add additional cooking time. The taste of spices are intensified because they cook off slowly, taste your meal 30 minutes before serving if it needs extra flavor add it at this point. And finally, if you need to cook your meal in a faster amount of time, place a piece of tin foil below the lid, it will reflect the heat back down on your meal and it will cook quicker.

Surprise your family with a hardy home cooked meal that makes it seam like you slaved all day in the kitchen. There are many recipes that are quick and easy to make, that will save you time and money and make you a super mom in the kitchen.

Crockpot Chicken Recipes - Amazingly Delicious!

These crockpot chicken recipes are delicious. Just check these out and I'm sure you'll be amazingly surprised.

So here we go for some crockpot chicken recipes:

>>Crockpot Chicken Basic

~3 lb Chicken Salt and pepper

~2 Cloves garlic, minced

~1/4 ts Powdered marjoram

~1/4 ts Powdered thyme

~1 Bay leaf

~1/2 c Dry white wine (optional)

~1 c Dairy sour cream

~1 c Packaged biscuit mix

~1 tb Chopped parsley

~6 tb Milk

~10 Small white onions

Sprinkle chicken with salt and pepper, place in crockpot. Insert cloves in one onion. Put all onions into pot. Add garlic, marjoram, thyme, bay leaf and wine. Cover and cook on low 5 to 6 hours. Remove bay leaf and cloves. Stir in sour cream.

Increase heat to high and combine biscuit mix with parsley. Stir milk into biscuit mix until well moistened. Drop dumplings from teaspoon around edge of pot. Cover and cook on high for 30 minutes.

>>Crockpot Chicken And Rice

~1/2 lb Mushrooms, fresh

~1/2 c Onions, chopped

~2 lb Chicken, raw

~1 ts Chicken bouillon

~1 ts Poultry seasoning

~1/4 ts Salt

~2 c Water

~3/4 c Rice, uncooked

Slice mushrooms. Remove skin from chicken. Spray skillet with nonstick spray coating. Brown mushrooms, onion, and chicken pieces on all sides over medium heat about 15 minutes.

Stir in seasonings and transfer to crockpot. Can be refrigerated overnight. Start crockpot on LOW. When ingredients are heated, add rice. Cook until done.

>>Crockpot Lemon Chicken

~ 4 pounds Chicken Pieces

~ 1/4 cup All-Purpose Flour

~ 2 tablespoons Cooking Oil

~ 6 ounces Lemonade -- Frozen Concentrate, Thawed

~ 3 tablespoons Brown Sugar

~ 3 tablespoons Catsup

~ 2 tablespoons Water

~ 2 tablespoons Cornstarch

~ 3 cups Cooked Rice

~ 1 1/4 teaspoons salt

1. Combine flour with salt; coat chicken thoroughly. 2. Brown chicken pieces in oil and drain. 3. Stir together lemonade, sugar, catsup and vinegar. 4. Place chicken in crockpot and pour lemonade mixture over it. (the chicken, not the crockpot) 5. Cook on high 3 to 4 hours. 6. Drain liquid into saucepan; add corns tarch and boil till reduced. 7. Pour gravy back over chicken; serve over rice.

Cooking Games - How To Enjoy Being A Virtual Chef!

For the chef looking for a fun way to fill a little free time, the cooking game is the most enjoyable way to do it. Whether you have a few minutes or a few hours, a chef can learn a few different techniques and tips and race the clock, or other competitors! Whether it is word games, puzzles, or video games, the chef has endless options to wile away a few hours.

Nintendo has a game called Cooking Mama in which the contender races the clock trying to prepare quality food. What's great about this game is it also offers tips and tricks on the screen that you can use in your real kitchen. The player must chop vegetables, fry, grate, peel, mash and all the other things a cook does in their real kitchen. This game has amazing interactive capabilities where a touch screen is used to put together an omelet, and you must blow into a mike to cool off the food.

The virtual chef stars with 15 recipes in their arsenal and as their skills increase, so does their recipe stash, up to 60 are available! And if 60 aren't enough, the player can even experiment to create their own new recipes. There are more than three hundred different ingredients available from more than ten countries, such as Spain, Japan, India and France.

The challenge in this game is the judges. There are bronze, silver, and gold medals available for the winners. If the judging is too stressful, gamers can also play without the option of judging to experiment with new foods and recipes. There is also a multi-player option for the chef who wants to challenge his friends to a cook-off.

If this doesn't sound like the game you're looking for, there are still more options. Many websites offer cooking themed games for the chef to try their hand at; hangman, word searches, and jigsaw puzzles are all available offering a challenge. One game available online is the Better Barbeque Challenge in which individuals flip burgers to earn points. If the burger is taken off too soon, the meat is raw and no points are earned, if it's too late, the burgers are burned.

More ingredients are also added to turn up the heat, and the thermometer must always be watched to make sure food is properly prepared. Regardless of which game is right for you, there is sure to be one out there that fits the cooking bill.

How to Open the Hood With a Broken Hood Release Cable

When you pull the hood release lever in your vehicle, you are pulling on a cable, just like the brake or shift cables on a bicycle.  When the vehicle gets older, and you are under the hood every week to add oil, the cable will eventually wear out and break.  So how do you get the hood open without the cable?  My experience was with a 1991 Chevrolet S10 Blazer, but the technique I used may be applicable to other vehicles.

The only tools required are a set of pliers, a good work light, and some heavy aluminum wire.  The aluminum wire is about twice the thickness of spaghetti, and the stuff I used was 8 gage aluminum ground wire from Radio Shack.  The advantage of aluminum is that it is soft enough to work like a string, but stiff enough to create a hook.  It also is easily workable with your fingers.  If you don't have that, a coat hanger may do.

Set the work light down low so that it shines up through the grill at your latch.  In the case of my Blazer, all I could see was the metal casing for the latch.  No portion of the mechanism was visible.  Here is where a mental picture becomes important.  The cable provides a pulling action.  You must hook your aluminum wire close to where the cable connects to the mechanism, and then pull in a direction as close to that of the cable as possible.  If you don't know what the mechanism looks like, try and find a picture, or find a similar vehicle and examine its mechanism.

In the case of the Blazer, the business end of the cable connects near the front-center part of the case that encloses the mechanism.  Make a hook by bending the last 1/4 inch of the wire at a 90 degree angle with the pliers.  The aluminum wire can be bent very easily with your bare hands into as many compound angles as needed to make a tool that will reach the end of the mechanism.

It took me about 10 minutes and about four tries pulling to finally hook the mechanism.  When you think that you have it, apply some downward pressure to the top of the hood.  This will compress the latch spring, and hopefully take some pressure off of the mechanism so that it opens easily.  Then, pull steadily on your wire.  If you have hooked the mechanism, you will feel it give as the latch operates, and then you can stop pushing down on the hood, and try to lift it up.

Once you get it open, you can replace the latch cable.  This can be expensive and time consuming, so if you don't care about how it looks, you can run the aluminum wire out through the grill as a new hood release.  In my Blazer, I ran a double length, and then bent it in half at the loop on the mechanism, so I have a double-strength pull.  The softness of the aluminum is what allows this to work.

Finally, be sure to grease your latch mechanism well, and also the spring latch on the hood, so that the latch will open as easily as possible.  The hood may have rubber leveling feet at each of its corners.  If you let these out too far, it will make for a nice, stable hood, but it will put too much pressure on the latch, making it difficult to open, and leading to premature cable failure.

Chef Hat History

Chef hats have a history that can be traced as far as the beginning of the centuries. Although the real origin is not really known, it does go back a long way. It is a popular belief that the chefs in the courts of Iran and the nearby nations wore the chef hats even in the B.C. times, although for reasons that might be different from now. However, the shape and sizes must have considerably undergone some drastic changes since then. Even with all the noticeable changes, the chef hat is still being worn by all the chefs and cooks worldwide to avoid stray hair from falling into the dish being prepared allowing contamination of the dish.

Tradition indicates that the number of pleats on the headdress indicates the experience of the chef. Of course, this means the head chef, who is the one with the maximum experience gets to wear a hat with a hundred pleats. Although a hundred pleats are not found on a head chef's hat these days, these hats do contain the most number of pleats still. The number of pleats also indicates the number of ways the chef can prepare a dish as so any head chef worthy of the title must be allowed to wear a head chef hat in honor of the knowledge possessed.

A chef's hat worn these days is mostly a covering for the head than to depict any other symbolism. They also come in different sizes, heights and shapes depending on who would be wearing them. All the cooks, chefs, and others involved in the kitchen work are supposed to wear them without fail - taking hygiene into account more than anything else.

History indicates toque to have been worn by both men and women as a head covering while cooking. French, Italian, Spanish, German and other countries adopted a unique style by the early 16th century. Starched cloth and wool chef hats came into picture in the early 17th century in many countries. These are still popular as along with keeping the hair in place, they also absorb the heat and sweat caused due to the heat in the kitchens. Early 19th century saw a revolution in the chef's hats. Chefs dealing with various food preparations ended up putting on different caps to be distinguished in their areas of specializations.

Even with all the advancements in the history of chef hats, they still distinguish the chefs and the cooks even when they are currently made from paper and fiber instead of cloth. Cooks and chefs all over the world wear these hats regardless of the history and the tradition, which resulted in evolution of the chef hats.

The Basic Steps in Increasing the Stock Horsepower in a Ford Powerstroke Engine

You love your Ford Powerstroke truck right? They are definitely great trucks and the vehicle of choice for me since they were introduced back in 1994. The stock horsepower is ok, but wouldn't you love to have more power, more torque, better drivability, and of course pick up some fuel mileage? Who wouldn't? There are three very basic steps to take to achieve this goal. I'm going to share here the theory and principles we apply to every diesel pickup that comes into our shop.

The first thing you will need to understand that a diesel engine is nothing more than an air pump. The mechanicals of an engine work very similar to the air compressor out in your shop. One stroke downward of the piston draws cool fresh air in. The next stroke up compresses this air. Once the air is compressed, the fuel injector fires fuel directly into the cylinder causing the fuel to ignite from the heat of the compressed air. The piston is forced back down again by the expanding fuel burn. Because this downward force is what turns the crank and actually creates the rotational power, the stroke is called the power stroke. Once the piston reaches the bottom of the cylinder, it comes back up on the final stroke that pushes the exhaust out of the engine. Once we strip away the computers, wiring, and seemingly endless amount of wires and hoses running around the engine compartment, we can see the engine is still a very simple air pump. So let's build on that principle with three basic steps that will help that air pump work easier:

1. We must open the intake tract so that the engine pulls air in easier and cooler.

One of the first modifications you should do to your truck is install some sort of cold air intake kit. While the stock airbox filters air pretty well, it was only engineered to flow enough air to feed the engine at factory horsepower settings. Since we are going to up that horsepower, we need more air. Not only do we need more air, but we need cooler air. A popular modification we see is an open element K&N style cone filter just attached to the end of the air cleaner hose. While this modification is cost effective, we have actually seen a drop in horsepower on our chassis dyno. While the filter flows more air, you are now sucking warmer air underhood air into the engine. The warmer the air, the less oxygen molecules. So we have negated any reason at all to do the mod with an open to the engine compartment filter.

What we suggest, sell, and install on a regular basis is a cold air intake kit that sucks it's air from the grill or fender area. When looking at the kits, find one that has a snorkel type piece that ends outside the engine compartment. Filter systems of this style deliver cooler air to the turbo. The cooler the air, the more oxygen rich the intake air is, the more horsepower we can make when the injector fires. Most cold air intake (cai) manufacturers claim a 40-50 percent increase of air flow. Most cai kits that suck their air outside the engine compartment have shown an 8-12 rear wheel horsepower increase on our chassis dyno. Many of our customers report a 1 mpg increase in fuel economy and much more free feeling engine. Why? Because we have made it easier for the engine pull air in along with the side benefit of more oxygen rich cooler air. Also we have lowered our maintenance costs because nearly all cai kits have reusable, washable filters.

Now if you have gotten excited and started looking for a cai kit for your truck, you may have just gotten overwhelmed by all the choices. Our suggestion for all years of Powerstrokes are the S&B brand intakes. We sell them 10 to 1 over any other brand. The fit and finish is great. We also really like the underhood appearance once they are installed. And best of all, a complete S&B intake kit can be had for around $270 shipped. That also makes them the most economical of most of the kits.

2. We must open the exhaust tract so that the engine can get rid of the exhaust gases easier and quicker.

The next step to take is tossing that factory exhaust in the scrap pile. By changing your exhaust to a full four or five inch system, you will make it easier for the engine to get rid of the spent exhaust gasses. To illustrate the difference, grab a stirring straw and a spent toilet paper roll. Blow through the straw and then through the paper roll. Which is easier? Which do you think your engine would like better? Just like the factory air intake system, the stock exhaust system was engineered to meet sound, emissions, and cost requirements. Also they were only designing a system that would be adequate for factory horsepower levels. Since we are shooting for more than factory, we need to upgrade. If it is all possible to remove the catalytic converter, you should. Depending on your state, it may not be legal, but the converter is a major restriction in the exhaust system. When ordering a new exhaust, make sure to check and see if it has provisions for the converter or not. Any system labeled "off-road" will delete it. Just make sure you buy the right exhaust to keep you legal with the law.

Most manufacturers claim a 15-25 rear wheel horsepower increase with their systems. We have observed similar results on our Superflow chassis dyno when testing trucks before and after an exhaust install. Most of our customers report 2-3 mpg fuel economy increases and much freer, quicker revving engine. Exhaust gas temperatures usually drop on average 150-250 degrees depending on the system. If the engine doesn't have to work as hard to expel the spent exhaust gasses, more of that power can be transmitted to the crankshaft. Along with a nice exhaust tone we gain horsepower, torque, and fuel economy.

Once again, if you have cracked the latest diesel magazine shopping for exhausts you might be overwhelmed by the choices. The sky is the limit here. Depending on the size, style, material, and the exhaust tip you want, prices vary from $300 to over a grand. Personal preferences will play a role in your decision. We suggest either MBRP or Diamond Eye exhaust systems. You should be able pick up an aluminized turbo back 4" system for roughly $300 shipped. MBRP now has some kits out that have no muffler for a true all out performance sound. The sell for around $285.

We now need to adjust the engine's computer for better fueling, timing, and power output.

Here's where things can get really confusing for most people. The choices are so varied that many are immobilized by picking some sort of programmer for fear of hurting their engine or not getting what they are hoping. Once we open the engine up so that it is able to move air more efficiently, we can add more fuel and adjust the timing to get more power, torque, and mileage. We have to remember that like the intake and exhaust, the stock Powerstroke programming was engineered to meet certain horsepower, emission, and cost requirements. They weren't looking to make the engine the best they could. They only had a horsepower goal they had to reach. Since we don't have those same limitations to abide by in the aftermarket world, we can get much better performance out of the engine with custom programming. Nearly any function that is computer controlled can be manipulated to provide a better, nicer running truck. Some of the main things that are adjusted with programming are: fuel quantity, injection timing, turbo boost, injector pulse width, shift timing and firmness, idle speed, top speed limiters, and much more. Once can expect anywhere from a 50 horsepower gain all the way up to 250 rear wheel gain on the newest Powerstrokes. Torque increases can be from 100 to 400 ft/lbs. Depending on your truck and the programming used, 3-10 mpg fuel economy increases can be realized. Dollar for dollar, changing the truck's programming will net you better gains in all areas than any other modification.

There are three basic types of products:

The first is an actual chip that plugs into the back of the engine computer used on the 94-03 7.3 trucks. They are capable of holding usually up to eight different performance programs and can be switched on the fly. For the 7.3 trucks, this is the best option because it allows you to work with a tuner to build custom tunes for your specific truck and modifications. These have been around forever and work really well. The price range on these run from $300 for a single program to $450+ for a multi-position custom chip.

The second way of changing the programming is with a hand held programmer. Nearly everyone has seen the Superchips or Diablosport style programmers. These units have a plug that is the same as the OBDII diagnostics port under the dash. You simply plug the programmer in and follow the on screen directions. Most standard programmers have three basic tunes on them. Usually a tow tune, an economy tune, and then an all out horsepower race tune. It is possible to get custom programming for these too. Instead of loading the tunes on a chip, the tuner would load the files on the programmer. As an added benefit, most programmers will also read diagnostic trouble codes and some real live sensor data. Many folks think you have to leave the programmer attached after programming, but that is not so. After reprogramming the factory computer, you can unplug the programmer and put it away until you want to change to a different program. Most of these programmers cost around $375 and up if you want special programming.

The third method is with a dash mounted programmer. There are a couple of different styles. One kind like the Edge Juice with Attitude actually does nothing to the computer but rather hijacks the signals going to the injectors and a few sensors to manipulate the fuel output. These can be changed on the fly without shutting the engine. They usually have five or so settings of increasing horsepower. I would not recommend these for automatic transmissions. The quick change in power along with no modification to the transmission strategy is sometimes too much for the stock transmission to take.

The other style of dash mounted programmer works just like the hand held versions. They have three to four tunes in them. You will have to stop and turn the truck off if you want to change levels. The great thing about the dash mounted programmers is that they have real time gauges in them. They are able to monitor anything that the factory computer does. Most of them come with an egt probe to put in the exhaust so you can monitor egts. The other great thing about this style of programmer is not only that they usually run in the upper $400 range, but they come with built in gauges which would cost you another $400-$500 if you had to buy them separately.

We usually do programming in the shop by attaching our laptop directly to the truck and building a program according to the customer. Since we can't do that for everyone all over the country, we usually recommend the Edge Evolution programmer. It works fantastic, has built in gauges, several power levels, warning alerts to keep your truck safe, it reads diagnostic codes, and is just a really nice looking unit. You should be able to find them for $479 shipped.

And there you have it. On our hypothetical truck here, we have installed a S&B Cold Air Intake, a MBRP 4" Exhaust System, and an Edge Evolution programmer. If you have some basic hand tools and a little bit of mechanical ability, you could install all this yourself no problem. The cost of everything would be about $1050. For that grand we will typically would gain: 50-100 rear wheel horsepower, 150-250 ft/lbs of torque, and anywhere from 3-8 mpg. Best thing, we have a fun truck to drive!!

Some Meat Smoking and Grilling Tips

Smoking meat is all about cooking the meat low and slow unlike grilling where grill fare are seared at searing temperatures. If you are truly serious about barbecue and smokey meats, then you need to learn a bit about it. Smoking meat is part skill, part experience, and part equipment. If someone is new to meat smoking, asking peers about basic things one needs to learn will really help. Most burgeoning pit masters won't share secrets about their recipes, but they will share the basics of what to do. One can look on the Internet for recipes and some of that great taste. The longer someone is an active meat smoker, gaining experience and contact with other smokers, the more opportunities for learning new techniques and secret recipes will arise.

The indirect method of smoking allows you to use an ordinary grill as a smoker and believe it or not, you can turn out some interesting fare this way. Smoking meat is a great way to break down tough cuts of meat, such as ribs, brisket and pork shoulder. Smoking meat is cooking it between 190f and 225f while in the meat smoker. Cold smoking meat is primarily for cured meat like ham, bacon etc. And is done inside the meat smoker at temperatures below 80f. Cold smoking always takes longer than hot smoking. You can short smoke meat like steaks and chops on the barbecue grill with gas grills smokers or long smoke meat inside gas grills smokers. Whether you smoke your meat inside a portable grill or meat smoker, any way that you decide to push smoke into the meat is a great way to enjoy it.

Smoking meat calls for acquiring the proper internal temperature. Because outdoor temperatures will dictate cooking time, you cannot rely on time alone. There are many recipes available but they cannot be applied across the board. Meat smoking is also a growing trend for great flavor by adding taste to food without adding extra fat. When the smoke covers mild meats like pork, fish and poultry, it produces a mouth-watering flavor and rich color that's hard to resist. Smoking is easy to do and can be accomplished in a kettle-style grill using indirect heat and adding wood chips to banked coals. At least two hours before you plan to start cooking, place wood chips or wood chunks in water to soak. Estimate two chunks of wood or a good handful of wood chips for each hour of planned smoking time. If you have unburned soaked wood after completing smoking, it can be dried and used at another time. Build the fire about 40 minutes before you plan to start cooking. Remove the cooking grate from the covered grill and build a mound of about 25-30 charcoal briquettes on one side of the fire grate, light them, and let them burn down to glowing embers, covered with gray ash. Leave only one of the bottom air vents open directly under the charcoal. Place an aluminum loaf pan filled two-thirds with water across from the charcoal.

Smoking meat is mainly used to soften and add flavor to the meat. It can also be a low heat and slow method that works superbly for fatty or tough meat like beef brisket, beef ribs, pork spareribs, or lamb shoulder. For that signature smoky flavor, you need wood chips. Apple, maple, mesquite, and hickory are the best wood chips to use. There are some considerations when smoking meat on your own. To prevent food poisoning, observe cleanliness when working with raw meat. Wash surfaces and your hands often, separate meats in different stages of preparation, and cook & chill using proper temperatures. Defrosting the meat properly is an important step in the process. Defrosting in the smoker can cause bacteria to breed within the meat. Remember, smoking takes longer. Regular grill cooking happens much faster and the bacteria would not have time to grow, but with smoking it is a real possibility.

Smoking meat is by far the exceptional means of achieving that desired flavor but it also requires the most effort. With the benefits of our up to date barbecuing tools the identical results can be realized without all of the extra work involved. The quickest way to add the smoke flavor to any meat is by using liquid smoke. This can be added to any food from baked beans to grilled fish. There are several pitfalls to this item as it does not impart a true smoke flavor to your recipe nor should the liquid be employed on an ongoing daily basis. We recommend this product only to create more interesting homemade sauces. You can use your backyard gas grills smoker to smoke meats. Several manufacturers of grills now include a smoke trough where you can insert a mixture of wood chips, pellets or chunks of hardwood for use as smoking material. The hoods on these grills generally call for closure when meat smoking is indicated. If you have an older grill which lacks the trough don't worry, as you can purchase a smoke box at your local department store, or you can assemble your own out of aluminum foil pockets to hold the wood pieces. The only problem with using gas grills smokers for smoking is that the grill tends to cook the meat rather quickly. How to Braise Meat

"To Braise" means browning in fat and cooking covered in a small amount of liquid. It's a method used to tenderize and intensify flavors in meat or vegetables. Usually inexpensive cuts of meat are best suited for this style of cooking, so it's an affordable gourmet meal with little fuss.

Listed below are the 4 basic steps to braising meat, and an example chart for different meats and their cooking times, followed by a recipe for: Braised Ginger Beef with Pomegranate Sauce.

1st Start by choosing a cut of meat. Lamb or beef shank, pork or beef shoulder roast, top blade steak, brisket, chuck roast, and short or back ribs are the most common beef, lamb and pork braising choices. Most are tougher cuts of meat with high levels of protein known as collagen. Collagen cooked at low temperatures for long period's converts to gelatin in the braising process which in turn tenderizes the meat and creates a rich thick sauce. So don't think you need to buy a tender cut of meat to end up with a good meal. In the end tougher cuts of meat are better for creating the richest flavor and thicker sauce. The secret is in the gentle slow cooking. Chicken and fish are also great choices, however, chicken should not be skinless and bone in is best, preferably legs and thighs, and for fish, shark and swordfish cuts will hold up better than others.

2nd Then brown in fat. Depending on your recipe, most meats are browned first in a small amount of fat for color and flavor enhancing. Using a Dutch Oven or large heavy pot with a tight fitting lid, add your fat, heat to a hot temperature, add the meat and brown on all sides. Usually browning takes 10-20 minutes and is a process that does not cook the meat all the way through, it's a surface cooking called browning or searing to lock in flavor. Most commonly meat is left whole for braising, but if meats are cut, remember same size portions are the best for even cooking.

Tips: For successful browning, foods must be dry and free of moisture or steaming not browning will result. Also not crowding your pan will allow moisture to escape during the browning process and give you a properly browned item.

3rd Then add your liquid. Liquids can include, wine, apple juice, water, broth or etc. Liquids, however, should not cover the meat. Usually no more than a ¼ - 1 cup is needed and sometimes no liquid is added depending on the recipe. Also at this point other items can be added, onions, garlic, spices, vegetables and etc.

4th Cover and cook on a very low heat, over a stove top, in a slow cooker or in the oven usually for 1 to 4 or more hours, depending on the recipe. Oven cooking is most effective, due to even heat from all sides which offers the best flavor and tenderizing results, along with a less fussy project. ( braising temperatures are 145-300 degrees, inexperienced cooks, however, should not cook below 185-200 without proper equipment for temperature control, meat can spoil if improperly cooked on to low a heat, if there is a simmer (small bubbling) going on in the pot you know your temp is not to low)

Example Cooking Times:

Lamb Shank, four to six shanks each one pound, 2 ½ hours

Shoulder roast 3-4 pound, 3½ - 4 hours

Top blade steaks, 2 ½ to 3 pound, 1 ½ inch thick, 1 ½ to 2 hours

Brisket, 3½ to 5 pound, 1 ½ inch thick, 3-4 hours

Back ribs, 3-4 pounds, 2x2x4 inches, 1 ½ to 2 ½ hours

Short ribs, 3-5 pounds, 2 ½ to 4 hours

Boneless chuck roast, 2½ -3 pounds, 2½ hours

Chicken, bone in, 1 hour

Swordfish, 2-4 pounds, 1 inch thick, ½ to 1 hour

Ginger Beef with Pomegranate Sauce

3 - 4 pound Brisket or Shoulder Roast

2 tablespoons olive oil

1 large onion, chopped

3 inches of fresh ginger, sliced ¼ inch thick

15 large garlic cloves, pealed and left whole

1/3 cup soy sauce

1/3 cup pomegranate syrup (most stores carry this)

1/3 cup brown sugar

Wash the brisket and dry excess moisture from the surface of the meat.

In a heavy pot with tight fitting lid or Dutch oven, heat the oil and brown the brisket and onions together for about 7-10 minutes. Turn the brisket to evenly brown on all sides.
Add the remaining ingredients, cook for about 3-5 minutes until sugar is melted and sauce becomes hot, stir well, cover and bake in a 300o oven for about 3-4 hours, stirring once or twice to baste the meat. (a slow cooker can also be used and will require no stirring, however I like to stir and baste once just because I enjoy checking the progress)

For stove top cooking, cover and keep flame low, and sauce at a slow simmer, stirring about every 30-45 minutes. Cook the brisket for about 3-4 hours, or until meat is tender and sauce has thickened.

If sauce has not thickened to desired thickness when the brisket is ready; remove meat and lid, then reduce for a couple minutes.

Slice meat and arrange on a large platter, pour the sauce over the top and garnish with cherry tomatoes and or parsley.

Use a tortilla for the crust and it can be a fast dinner even for a weeknight. Also, colored toothpicks will inspire children to eat new things. If you place a toothpick in their vegetables (and possibly offer a dip) they will eat them. If they are old enough, let them insert the toothpicks themselves. The secret here is keeping it fun.

Lastly, sneak vegetables into old standbys that all children devour with ease. You can puree a cup of carrots and add it to spaghetti sauce. Shred zucchini and squash (or any other veggie) into wet chocolate cake mix. The size of each veggie should be similar to the size of a matchstick carrot. Kids love cake. You'll be amazed with the results when you relax and keep it fun. There's nothing wrong with letting them have their cake and their vegetables too!

History of Gumbo and Cajun Fare

The "Cajuns" of Southern Louisiana originally obtained their name from their ancestors, a group of French peasants that settled in the "Acadian" region of the Bay of Fundy in Nova Scotia around 1604. By 1755 they had grown to a population around 15,000, and like most people in like regions lived on standard crops, garden variety vegetables and whatever livestock they could raise, wild game they could kill, and fishing.

Ultimately they were forced out of Nova Scotia by the British, and originally sent south to Maryland, some shipped off to France, and ultimately to Louisiana since it was predominately French owned at the time. The name "Acadian" was shortened to "Cajun" by the English people living in Louisiana at the time, and predominately treated as a unique ethnic group since they were primarily transplants and not locals.

The government in the area was Spanish at the time, and they opted to relocate the transplanted immigrants outside the populated areas more into the countryside. However, the Acadians had issues trying to grow the same crops in the river bottoms and heat of Louisiana. These settlers rapidly grew into a dual class system. The upper class being crop planters growing cotton and sugar, then rice. The lower class became more like small farmers. The upper class of "Creaoles" adopted slavery to maintain their large properties of farm land.

As the upper class became more prosperous, they squeezed the poorer Acadians out and forced them into the less desirable swamps of Louisiana. It was much more difficult to make a living and grow crops and livestock in these muddy lands and murky waters. But these waters held an abundance of wild game, and everything from Alligators to turtles, fish, crawfish, deer, squirrel and wild pigs were easy to harvest for sustenance. Since the Cajun kitchens were simple, most had a large pot that held a continuous storage of contributions that the family members and neighbors caught or killed in the course of a day that would simply be added to the pot. The addition of vegetables such as corn, beans, and rice when available were a welcome addition to any pot.

Eventually flour was introduced to the menu which allowed the introduction of a "Roux" to the mix. And since these people were far from central areas and townships, gatherings would often include dancing, drink, and the occasional brawl. Cajun food was a simple version of Creole. It was spicier as peppers were added to enhance the flavor of the wild meats and vegetables, and lack of natural spices were not available. Creole foods introduced some of the richer foods such as Shrimp Creole and Crawfish Etoufee. However, crawfish was really not introduced into the diet until sometime in the 1940's. Prior to that time, it was primarily used as bait. As people discovered the richness of the meat, they began to labor to harvest it and add to the menu.

New Orleans has always been the capital of Creole and Cajun cooking, and had established a reputation as such by the early 19th century. Antoine's Restaurant opened in the French Quarter in 1840, and is still located in the French Quarter today.

This brief history would not be complete without my own special offering recipe of Cajun Gumbo which I still make about twice a year. Each time I make it, I try to keep it down to one 3 gallon pot, but invariably, it grows to at least a 5 gallon pot, sometimes two.

2 lbs. fresh skinned chicken breasts

1 lb. andouille sausage (cubed)

1/2 lb. catfish or redfish

1/2 lb. crawfish

1 lb. Crab legs

1 lb. shrimp (large)

6 cups okra

3 cups rice

1 cup beans

Tbs. Salt

Tbs. Pepper

Tbs. Tabasco

1 bag seafood seasoning (this is a bag of seasonings, that you insert into the pot during cooking time) I generally remove about 3/4 through cooking so it doesn't over flavor.

First of all, brown the chicken in a black skillet, using a lot of shortening (about 1") remove chicken when browned, and set aside chicken to cut into bite sized chunks.

The fat used in roux should be shortening but you can use oil if trying to be healthy. Combine fat with an equal amount of flour, Melt the fat in a black skillet over low heat. When warm and fluid, sprinkle the flour in a little at a time, stirring. Stir constantly until brown (this may take 20 to 30 minutes, and has taken me an hour at times) immediately remove from heat or add ingredients your recipe calls for. If it burns even slightly, throw it out and start over again. I have used store bought Roux, but it never tastes the same.

Bring a large pot of water to a boil, add the roux and stir thoroughly. Then put heat on slow simmer where it barely bubbles. Then add the meats. Hold off on the Shrimp and crab until an hour or so before serving, or you'll over cook it. Some people cook the rice separately and serve it on top of the Gumbo. I prefer to cook it in the Gumbo, but be careful because it is easy to over use, and soaks up all of the juice. I generally prepare the Gumbo the night before and let it simmer all night, but be VERY careful. I have woke up the next day to an entire scorched pot of Gumbo, and had to start over...

PS. Serve with large amounts of fresh bread and beer!
